1 pound of chicken breasts or tenderloin, trimmed of fat
1 cup Franks Red Hot
1/2 cup Ranch, low-fat
1 – 8oz package of Reduced Fat cream cheese
1/2 cup shredded cheddar cheese, part-skim
1 tsp olive oil
salt & pepper
In a skillet, add the olive oil and heat over medium. Add the chicken breasts or tenderloin and cook on each side until thoroughly cooked. Remove and set aside.
In the same skillet, add the cream cheese and stir until it has become soft and creamy. Add the Franks & ranch, stir to combine.
Add in the chicken then the cheddar cheese. Stir until melted and season with salt and pepper.
If you prefer a crunchy top, place in a casserole dish and broil in the oven for about 2-3 minutes or until the top has browned. Serve with tortilla chips, crackers or celery sticks.
** If you are making the recipe ahead for a party, place in the casserole dish and then heat at 350 degrees before serving to warm.
