5 cups cauliflower
2 Tbsp unsalted butter
2 Tbsp flour
1 cup fat free milk
1/2 part skim shredded cheddar cheese
1/4 cup grated parmesan cheese
1/8 tsp ground nutmeg
1 Tbsp chives
1/2 tsp black pepper
1/8 cup bread crumbs
Bring a pot of salted water to boil. Add the cauliflower and boil for about 5 minutes. Drain and place cauliflower in a casserole dish, set aside.
In a small sauce pan, melt the butter over medium heat. As soon as it is melted, whisk in the flour then cook for about 30 seconds.
Add in the milk, slowly and whisking the mixture the entire time. Bring to a boil then immediately reduce to a simmer, constantly whisking. Sauce will begin to thicken ** if not thickening add a small bit (about 2 tsp) of flour**.
Add the cheddar, parmesan, and chives once thickened and stir to combine. Mix in the nutmeg and pepper.
Drizzle over the cauliflower and gently mix together.
Sprinkle bread crumbs over the top and bake at 350 degrees for about 20 minutes or until browned on top. Serve immediately.
