Easy Cheesy Mexican Corn

If you realized it by now, I am dying for summer!  The weather yesterday was so freaking weird.  One moment it was a complete white out with snow being blown completely horizontal then it was so bright & sunny with blue skies.  This happened all day.  It was like mother nature was screaming down at us “HAHA YOU SUCKERS LOOK WHAT I CAN DO!”  Seriously Mother Nature, enough with the sass.

With summertime on the brain, I am mostly craving some of my favorite warm weather foods.  I was able to get a small little taste of peaches, but it isn’t the same eating them with a large sweater on while freezing at my desk.

Corn is another one of my favorite summer sides.  Michigan does not disappoint in this area.  Around the end of summer, the corn is so sweet & delicious you can literally eat it raw off the cob.  I love to make different flavored compound butters to slab onto the corn all summer.  I definitely will be posting some of these throughout the summer.

Over the weekend, some works girlfriends and I planned a Bachelorette party for one of my colleague’s.  The theme was a Mexican Fiesta.  I was pretty proud of this cute flag banner I made:

Along with Bryan’s delicious guacamole, I planned to make a Roasted Corn Salad.  However, we already had a lot of food so I skipped it.  Also, I couldn’t find this particular cheese that makes it omg delicious.  Last night, I decided to make a small corn side to go with the salmon I prepared.  I wasn’t planning on making anything to post on my blog last night, but this little creation turned into something really tasty so I decided to share.

Recipe by:  Sara
Servings:  4   ///   Preparation Time:  10 minutes   ///   Cook Time:  3 minutes

Ingredients:
1 bag of frozen corn
1/2 red bell pepper, diced small
1/2 jalapeno, minced
1 cup shredded sharp cheddar cheese
2 Tbsp Frank Red Hot
2 tsp chili powder
2 tsp cumin
1/2 tsp garlic powder
salt & pepper
2 Tbsp cilantro, chopped [optional]

Directions:
1.  Pour the corn into a microwavable bowl and cook for about three minutes.
2.  Add all other ingredients and stir to combine.
3.  Heat in microwave an additional minute or until cheese has slightly melted.
4.  Serve warm with a sprinkle of cilantro.

    This looks awesome (and just like summer!). I love dishes that are fresh like this but have a little twist to the standard preparation.
