FOR THE BURGERS:
1 lb lean ground beef
1 medium carrot, grated
1 green onion, chopped
1/2 tsp ground ginger
1 tsp Sriracha
1 garlic clove, minced
1 Tbsp cilantro, chopped
Salt & pepper
4 whole-wheat buns
1 fresh pineapple, peeled, cored and sliced
FOR THE PINEAPPLE TERIYAKI SAUCE
1/2 cup reduced sodium soy sauce
1/4 cup pineapple juice
Juice of 1 medium orange
1/8 cup brown sugar
1 garlic, minced
1 tsp fresh ginger, minced
1 Tbsp cornstarch + 1 Tbsp water, mixed together
2 Tbsp minced pineapple
1/4 cup water
Additional toppings: lettuce, avocado, tomato
In a bowl, combine the ground beef, carrot, green onion, ginger, Sriracha, cilantro, garlic, salt and pepper. Combine all ingredients together using your hands. Only mix until combined thoroughly, additional mixing will produce a tough burger. Divide the meat into four equal pieces and form into patties. Set aside while the sauce is started.
In a small saucepan, add the soy sauce, pineapple juice, orange juice, brown sugar, garlic, ginger, and 1/4 cup water. Bring to a boil then reduce heat to simmer. Slowly stir in the cornstarch and water mixture. Additional mixture may be needed if the sauce does not thicken to a glaze.
Heat the grill pan (or outside grill) to medium heat. Grill the burgers for about 3-5 minutes on each side depending on desired doneness and burger thickness. Also grill the pineapple slices until slightly browned on each side.
Drizzle some of the sauce on the buns and top with a slice of grilled pineapple and additional glaze if desired.
