1 large bushel of kale
1/4 cup dried apricots
1/4 cup slivered almonds
1 Honey Crisp apple, cut into small matchstick pieces
1/4 cup olive oil
1/4 cup lemon juice
1 Tbsp honey
salt and pepper
Remove the leaves from the kale stem and cut into juillenned strips. Put in a colander or salad spinner and wash thoroughly [these are dirty greens]. Chop the dried apricots into small pieces and prepare the apple.
In a large bowl, add the kale leaves and then add the oil, lemon juice, honey, salt and pepper. Toss to coat all of the leaves. Add the apricots, apple, and almonds.
Season with salt and pepper then serve.
