Ingredients:
1 large bag of fresh spinach
1 cup sliced strawberries
3/4 shelled, salted pistachios
5 slices bacon, cooked and chopped
1/4 white onion, minced
1/2 cup red wine vinegar
1/4 olive oil
1 Tbsp horseradish mustard
1 Tbsp brown sugar
1 Tbsp reserved bacon fat
Salt & pepper
Directions:
In a large bowl, place the spinach, slice berries, and nuts.
In a small saucepan, sauté the minced onion with a small bit of olive oil for about 2 minutes or until fragrant and softened. Add the reserved bacon fat, mustard, brown sugar, salt, and pepper. Whisk vigorously to combine all ingredients. Remove from heat and pour into a measure cup. Add about 2 Tbsp of the chopped bacon. Slowly drizzle in the olive oil which constantly whisking. Pour over the prepared salad and top with remaining bacon pieces. Serve immediately.
